Well, you might have made our Energy Bites, and just for fun we wanted to adjust them to a Fall Flavor. However, let me tell you how cool it is to incorporate pumpkin, which is a nutritional knockout! It is loaded with Vitamin A, C, Potassium and lots of other goodness. If you are able to incorporate a superfood like Pumpkin into your life, you will reap the terrific health benefits! Plus these snacks have pumpkin pie spice which makes all of it taste like a wonderful season of family and togetherness (with a little less work!) I’ll take that in a small nutritious snack!
Another note: You can adjust these protein balls to your taste. If you don’t like pecans, omit them, or switch them to almonds. You can also adjust the nut butter, for example almond butter in place of peanut butter. I just went with the ingredients I had on hand today! If you don’t like chocolate chips, or don’t want them in your snack, take them out! This recipe is beautifully flexible! 🙂
Pumpkin Pecan Protein Balls
Equipment
- 1 cookie scoop Or two spoons can work!
Ingredients
- 3 1/2 cups Rolled Oats
- 4 Tbsp. Chia Seeds
- 3 Scoops Vanilla Protein Powder I used Optimum Nutrition Whey powder. The scoop is just over 1/4 cup! You can omit or change to your favorite protein powder!
- 1 cup Pecan Pieces (Raw) Or Almonds, Walnuts or Raw Sunflower Seeds
- 2/3 cup Mini Semi Sweet Chocolate Chips You can omit, but really pumpkin and chocolate are magical! 😉
- 1 tsp Pumpkin Pie Spice
- 1 tsp Cinnamon
- 3/4 cup Canned Pumpkin Can be fresh
- 1/3 cup Honey
- 1/3 cup Peanut Butter
Instructions
- In a medium bowl, mix together the oats, chia seeds, protein powder, pecans, chocolate chips and spices.
- Scoop in the Pumpkin and stir into the mix.
- Pour in the honey, scoop in the peanut butter. Mix well until incorporated. This will be a thick mix!
- If you skipped the protein powder, you may need to add extra oats so the mix has some sticking power!
- Now, easy as pie, scoop the mixture with a cookie scoop and place in a container for the fridge. You can roll them if you want perfect little spheres. These should last 2 weeks in the refrigerator or 3 months in the freezer! They are great in a snack sized back and brought to school! Enjoy!
- When storing them, I separate the layers by a layer of parchment paper.
