Let’s Salsa!

I love fresh salsa! With chips, eggs, tacos, burritos, whatever the vehicle, give me all the fresh salsa!!

My good friend, Gina Ashby, gave me this recipe that is super easy and makes a ton to please a crowd, or to hold you over for a couple weeks! OR make it and put some in a jar or two to share with a friend. If you bring me cookies, I appreciate it for sure, but if you bring me fresh salsa, I know we are true friends!! 😉

Alright, first things first, this is kind of a cheater salsa in that it starts with Tostitos medium salsa as a base. This is not an advertisement for them. I am just a fan of the salsa that we create from that base.

Also, because it only involves chopping up fresh ingredients and adding them to that base, this recipe is totally user friendly. You can add more or less of whatever based on your own taste.

Ok, let’s get to it!!

First off, I get a large bowl out to make a batch of this goodness! I have 6 kids, all of whom love this salsa, so I never worry about having too much. But, if you think you’d better start with less, do it. You can easily half this recipe and still have a decent amount.

Pour in 2 jars of Tostitos Medium Salsa.

Then come the tomatoes. Dice them up and dump them in, juices and all. I generally use 8-9 tomatoes depending on their size. In the Summer we use tomatoes from the garden and it’s an extra slice of heaven, but during the rest of the year, I like to get the tomatoes still on the vine. It at least makes me feel as though they’ve been recently picked. I don’t want to know that I’m wrong here. Just let me believe in miracles, people.

Then come the green onions. I generally use 2 bunches of green onions, but my family really likes green onions. You could use just 1 bunch and be fine. This one is definitely based on your preference. I love the freshness and texture they add, but you do you.

Next, I put in the avocados. I am originally from California, and now live in Colorado. I will tell you that it kills me a little to buy avocados when I think of my friends and family that get access to free ones, but we all have our burdens to bear.

I use anywhere from 3-5 avocados. A lot of it depends on what I find at the store. If they are crazy expensive, or in bad shape, then I’ll only use 3, if they are looking fantastic and on a great sale, 5 it is!

Secret to Ripe Avocados!

You know avocados are ripe when they are dark, give a little upon gently squeezing them, and if you pull off the stem and they are green inside they are good!! If they are brown when you pull of the stem, put it down and walk away slowly. No one has time for nasty avocados.

Cilantro!!! I love cilantro for its fresh flavor!! There are some people that think cilantro tastes like soap. If that is you, skip this step and leave the cilantro for the rest of us. 😉

Some people include stems when they cut up cilantro, I do not. It’s a good way to get my kids involved in helping. I’ll give 2 or 3 kids half the bunch of cilantro and have them pull off the leaves and make a pile for me to chop.

I also add the juice of 1 lime. My husband LOVES lime and takes the opportunity to add it to most meals we eat together. If he were making this salsa without me, he would add 3 limes. Add the lime juice that makes you happy…. but use at least 1 lime.

1 Tablespoon of sugar is added to this mix to help cut the spice. It is not a spicy salsa, but there is a bit, since it is medium.

Last but not least, add salt to taste. I always add salt. Sometimes less, sometimes more, do you see how user friendly this recipe is? Whatever you’re feeling that day!

Chunky Salsa Recipe

Ingredients
  

  • 2 jars of Medium Tostitos jars large jars
  • 7-8 to Tomatoes-diced
  • 1-2 Bunches of green onions-thinly sliced
  • 3-5 Avocados-diced
  • Juice of 1 lime
  • ½ bunch of cilantro—or a whole bunch if you’re feeling it! coarsely chopped
  • 1 Tablespoon sugar
  • Salt to taste

Instructions
 

  • Start with a Large Bowl maybe 6 quart.
  • Pour in the Tostitos Salsa.
  • Chop up the veggies and add them to the mix.
  • Enjoy! (Try not to eat it all day) 🙂

Notes

Enjoy with tortilla chips, tacos, burritos, eggs, avocado toast, or a spoon, because let’s be real, all of these foods are just excuses to eat this salsa!
