Avalanche Bars: A Quick, Delicious Treat to Share!

As promised last week, here is the recipe for Avalanche bars!! Cue applause and raucous cheering!! The first time I saw these I thought they were Rice Krispie treats. I like Rice Krispie treats just ok, so I wasn’t particularly excited about them. Upon taking a bite, I realized my mistake and looked again at these creamy, peanut-buttery, super-sweet treats and knew a beautiful relationship was born! I have used several various recipes, but this recipe is the way I end up making it every time. We make these to include on the plates we take to go caroling, or if any of my kids request them. There are only 5 ingredients–so great! I needed to make a treat for a kids’ activity last night and put these together in 10 minutes!! The thing that took the longest was sticking it in the fridge to let it set before cutting them up.

Alright, let’s get to it. Ingredients needed: White chocolate chips, peanut butter, Rice cereal–Rice Krispies or the like–we use whatever’s on sale, marshmallows, and mini semi-sweet chocolate chips–you can use regular chocolate chips here too if you don’t happen to have minis, or M&Ms make for a festive look as well!

All you do is melt the white chocolate chips in a microwave-safe bowl in 15 second increments and stir occassionally.

Then add the peanut butter and blend it. Add in the cereal and mix–try not to mash up the cereal here. Once you’ve mixed it in and the mixture doesn’t feel warm, add in the marshmallows. Once the marshmallows are mixed in, add the mini chocolate chips. Pour mixture into a 9×13 pan–you do not need to grease the pan! Use a spoon to gently press the mixture into the pan evenly–this is sticky business!! Good luck! Ha!

Use the reserved marshmallows and mini chocolate chips to finish off the top. Isn’t it pretty!?!

Now stick that pan in the fridge for about 30 min to chill and set. Or, if you’re in a hurry–which I always am, stick it in the freezer for 10 minutes and you should be good! Cut it up, and enjoy all those little bits that crumble off while you are cutting, don’t worry, I won’t tell anyone!

Ingredients
  

  • 2 12 oz bags White chocolate chips
  • 1/2 cup peanut butter
  • 7 cups Rice Cereal
  • 1 1/2 cups Marshmallows
  • 1/2 cup mini chocolate chips

Notes

Empty the white chocolate chips into a microwave-safe bowl and warm in the microwave in 30 second increments. Stir in-between heating. Once melted, add the peanut butter and mix well. Add the cereal and lightly mix, making sure not to crush the cereal. Once blended, add 1 cup of marshmallows to the mixture reserving the remaining marshmallows. Making sure the mixture is not warm, add the mini chocolate chips, reserving a tablespoon or so to place on the top. Lightly mix and then spread the mixture into an ungreased 9×13 pan. Gently press the mixture into the pan evenly, being careful not to crush the cereal. Add the reserved marshmallows and mini chocolate chips on top. Cover and put the pan in the refrigerator to chill for 30 minutes, or until set. Keep refrigerated.
Cut up and enjoy!!!
