5 Quick and Nutritious Dinners to Make with Chicken!

Need some time saving and delicious ideas for dinner this week? We’ve got them for you! Whether you have chicken ready to cook, a rotisserie you have picked up, or some left over chicken to use, all of those could easily be utilized for these yummy and fast dinners.

  1. Veggie Salad Topped with Chicken

We make this regularly at our house. One because it’s so good for us, and because we love fresh food. We use whatever salad we have on hand, which is most often baby spinach and spring mix. You can use romaine or even a packaged Caesar salad. This is super straightforward! Roughly chop your spinach (or spring mix or both) and fill your plate with approximately 2 cups or to your liking. Now layer on whatever veggies you have on hand: peppers, carrots, tomatoes, avocados. I like to add berries and sliced almonds as well. Add 1/2 cup of chicken and you have an amazing meal. Drizzle lightly with your favorite dressing. Serve with Garlic Toast and enjoy!

2. Chicken, Rice and Veggie Bowl!

This rice bowl comes together so quickly! We often prepare extra chicken and rice on one night of the week, so we can have easy options for another day. If you don’t have any rice made, white rice is complete in about 20 minutes, which will allow you to chop a few vegetable. (You could also substitute quinoa here or certainly use brown rice.) This rice bowl is layered with about 3/4 cup of rice, 1 cup of sauteed vegetables, which in this case are broccoli, cauliflower, yellow squash and carrots. Then 1/2 cup of chopped chicken, a couple tablespoons of Asian dressing and a sprinkle of sesame seeds. Hooray! Dinner is ready!

3. Chicken Quesadillas!

This is a perfect Friday night meal for us, it comes together quick and is a total crowd pleaser. Plus I am ready for a break from the kitchen! 😉 I create them in a skillet with cheese, chicken and in this case we added chopped green chiles (not for all my kids). We serve it alongside a salad, or my kids snack on carrots, cauliflower and broccoli while I am making the quesadillas. Hooray! Dinner is ready and the clean up is a snap! Burritos are another quick go to, with rice, chicken, cheese, salsa and onions and peppers if you like!

4. Pasta, Broccoli & Chicken (with your choice of sauce)

This can be as easy as one pan preparation! The key is to prepare the pasta and the broccoli in the same hot water! When your pasta is boiling and is 3 minutes until al dente, add your fresh broccoli! It will turn out perfectly bright green and crisp tender in those final 3 minutes. (You could also use frozen which takes an extra minute!) Drain and mix up with your favorite sauce. My kids simply prefer butter and salt, I like pesto, but you could easily use a jar of alfredo or marinera! Top with your chopped chicken and you are ready for a delicious dinner!

5. Chicken, Tomato and Cheese Flatbread!

This dinner is also quick and yummy! You can prepare it in an air fryer, toaster oven or quickly broil it for 2 minutes in your oven. Take your Greek Pitas and layer them with chopped chicken, slices of roma tomatoes and a layer of cheese. This one pictured here has a smidgen of pesto on the bottom and Havarti cheese. Make it to your liking: you can easily brush the pita lightly with olive oil and a sprinkle of garlic salt and then add your chicken and cheese. My daughter prefers a sprinkle of Colby Jack, and of course this is versatile! Hooray dinner is ready! Serve this alongside soy beans, or carrots, cucumbers and hummus. Then you can use your other Greek Pitas in the hummus! Yum!
